- 200g mascarpone
- 160g whipped cream
- Banana skin caramel:
- 200g banana skins chopped
- 200g caster sugar
- 200g cream
- 200g cream to blend
- Maldon salt
- 335g banana jam
- 50g banana
- Blender

Instructions
Method:
- Make the parfait: put the egg yolks into the bowl of a stand mixer and get ready to whisk.
- Place the sugar and glucose in a small pan with a little water. Heat gently to dissolve and then bring to the boil.
- Boil to 118 degrees, then begin to slowly pour onto the whipped yolks until white and fluffy.
- Beat the mascarpone and banana together and fold in the egg mixture. Fold in the whipped cream and freeze.
