Substack
Jack Croft and Will Murray publish Fallow Chefs, a weekly newsletter that shares what actually goes on in the Fallow kitchen. Not the polished version. The real one: the techniques, the ingredient thinking, the moments that shaped how the food here gets made. Over 11,000 people subscribe. It is ranked in the top tier of Substack’s Food & Drink category. If you want to understand Fallow from the inside, this is where you start.
The Breakfast Conundrum
When Fallow first launched breakfast in 2023, the menu was built around indulgence. Steak and eggs, Royales, black pudding waffles. Food that made sense after a celebration or a big night. The chefs were proud of it.
How to Plate
Plating is one of those things that looks straightforward from the outside and is genuinely difficult to develop. Will Murray spent 3.5 years working his way through the sections at Dinner by Heston Blumenthal before he got to the pass.
Crispy Chilli Oil
Five years ago, crispy chilli oil was not something most people in the UK had a strong opinion about. Now it is on everything, and for good reason. Will’s first encounter was a jar of Lao Gan Ma sitting on the side of a staff canteen. He does not remember much else about that canteen.
