Instructions
Method:
Make the parfait: put the egg yolks into the bowl of a stand mixer and get ready to whisk.
Place the sugar and glucose in a small pan with a little water. Heat gently to dissolve and then bring to the boil.
Boil to 118 degrees, then begin to slowly pour onto the whipped yolks until white and fluffy.
Beat the mascarpone and banana together and fold in the egg mixture. Fold in the whipped cream and freeze.
