Banana Parfait

  • 160g caster sugar
  • 40g glucose syrup
  • 160g egg yolks
  • 160g banana purée
  • 200g mascarpone
  • 160g whipped cream
  • Banana skin caramel:
  • 200g banana skins chopped
  • 200g caster sugar
  • 200g cream
  • 200g cream to blend
  • Maldon salt
  • 335g banana jam
  • 50g banana
  • Blender
  • Chinois

Instructions

Method:

  1. Make the parfait: put the egg yolks into the bowl of a stand mixer and get ready to whisk.
  2. Place the sugar and glucose in a small pan with a little water. Heat gently to dissolve and then bring to the boil.
  3. Boil to 118 degrees, then begin to slowly pour onto the whipped yolks until white and fluffy.
  4. Beat the mascarpone and banana together and fold in the egg mixture. Fold in the whipped cream and freeze.
